The best guide to why your brew is taking so long

Kombucha Kamp lays out fermentation time as a range that moves with temperature, and makes the case for tasting rather than counting.

Read it if a batch is running slower or faster than the recipe promised, and it is not obvious why.

Most brewing instructions hand out a single number. Ten days, they say, and leave it there. Then the first batch comes in sour on day seven or still sweet on day fourteen, and there is nothing in the recipe to explain the gap.

What it gets right

The whole piece is built on one idea: fermentation time is a moving target, and temperature is the biggest thing moving it. Rather than a number, it gives a range of 7 to 14 days for a standard batch, and then a table that shifts the range by how warm the room is. A cool kitchen at 65–70°F stretches the same brew toward three weeks. A warm one at 80–85°F can bring it in inside a week.

That single table answers more first-batch questions than any amount of recipe text. The jar that has sat for twelve days and still tastes sweet is the one that worries a first-time brewer most, and most of the time nothing has gone wrong with it at all. It is a brew in a cold house! 😌

The second thing it does well is push the decision away from the calendar and onto the senses. It suggests starting to taste at the earliest end of the range, then every day or two after that, and it lists what to notice besides sourness: the smell, the firmness of the new culture, the tang. We think this is the right instinct, and it is the one most beginners resist. The calendar feels safer because it asks nothing of us.

What to bring back to a brew

Three things worth taking from it:

  • Find the temperature where the jar actually sits, not the thermostat setting. A shelf above a radiator and a spot on a tiled floor are different brews.
  • Start tasting at the bottom of the range. Tasting early costs a spoonful. Tasting late costs the whole batch!
  • Write the temperature down alongside the days. One batch tells us nothing. Four batches with their temperatures noted tell us what our own kitchen does, and that is the point where the range stops being someone else’s and starts being ours!
